This article is way over-sensationalized. CentOS Stream is not by any means a “beta” test product. Packages that hit CentOS Stream are very close to final release. If anything, even CentOS Stream is still more stable than any other non-RedHat alternative.
If you were running thousands of servers without paying for a RedHat subscription then you had better have the in-house staff capability to deal with the very minor issue of having to use CentOS Stream instead of the old CentOS. You’re also being penny wise and pound foolish — RHEL is dirt cheap compared to the cost of thousands of servers. For example RHEL for Virtual Datacenters is less than $1 per server per year when you start getting into the thousands.
